Oatmeal Ginger Cookies

Apparently, our friend Bezzie has been the chief cookie recipe author for Knit Circus for several years now. I dunno where my brain was that I didn’t know this until some time ago.

I bought the last issue and saw the latest recipe has two of my fave ingredients: orange and ginger.

So I armed myself with all the ingredients ready to make my cookies only to realize that I didn’t have molasses. I emailed Bezzie asking for a substitute. She helped me immediately with a suggestion but then I thought about it: this recipe had to be done the right way the first time! No subs!

It took me a bit to remember to buy the molasses. By the time I did, these brats of mine had eaten all the oranges! I buried a tangerine under the apples in the fruit basket but they still found it before I was able to make the cookies these evening.

My revenge, I added a healthy dose of oatmeal instead.

  1. They look amazing! I only have gingerbread and pumpkin pie in the house, but neither contains orange. Suddenly, I feel like there’s something missing.
